Microwave Mug Brownie with Peanut Butter Swirl

  • Author: Lilya
  • Total Time: 5 minutes
  • Yield: 1 serving 1x

Description

A quick, indulgent single-serving dessert made in the microwave with a rich chocolate base and a creamy peanut butter swirl. Ready in under 5 minutes using pantry staples.

Ingredients

Scale
  • 4 tablespoons (30g) all-purpose flour
  • 3 tablespoons (40g) granulated sugar
  • 2 tablespoons (10g) unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons (30g) unsalted butter, melted
  • 3 tablespoons (45ml) milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon (15g) creamy peanut butter
  • 1 teaspoon chocolate chips (optional)
  • Sea salt flakes (optional, for topping)

Instructions

  1. In a small bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt until smooth and lump-free.
  2. Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir vigorously with a fork until the batter is smooth, glossy, and coats the back of a spoon.
  3. Pour the batter into a 12-ounce microwave-safe mug, scraping the bowl to get all the batter out. Smooth the top.
  4. Drop the tablespoon of peanut butter onto the center of the batter. Use a toothpick or thin knife to gently swirl it into the batter to create ribbons; do not fully mix it in.
  5. Microwave on high for 60 to 90 seconds. Start with 60 seconds and check the center; it should be set but slightly soft. Add 15-30 seconds if needed, but avoid overcooking.
  6. Let the brownie sit in the mug for 1-2 minutes to firm up before serving warm.

Notes

Microwave wattages vary; start with 60 seconds and check frequently to avoid a dry, rubbery texture. For gluten-free, use a 1:1 GF flour blend. For dairy-free, use coconut oil and almond milk. For vegan, use coconut oil, almond milk, and a flax egg. Do not store leftovers as the texture becomes rubbery; best served fresh.
