  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chopped walnuts or pecans
  • Optional: ½ cup chocolate chips
  • Optional: 1 tablespoon sugar mixed with ½ teaspoon cinnamon for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, mash the ripe bananas with a fork until mostly smooth. Add the melted butter and maple syrup, whisking until well combined.
  3. In a separate large bowl, whisk together the flour, sugar, baking soda, cinnamon, nutmeg, and salt until no lumps remain.
  4. Create a well in the center of the dry ingredients. Pour the banana mixture into the well, then add the egg and vanilla extract.
  5. Gently stir with a spatula or wooden spoon until just combined. Do not overmix; stop as soon as the dry ingredients are moistened.
  6. If using, gently fold in nuts or chocolate chips.
  7. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full. Sprinkle with cinnamon sugar topping if desired.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes
