  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature

  • 1 cup (125g) all-purpose flour
  • 1/4 cup (20g) unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup Nutella (for filling)
  • Chocolate chips (optional, for extra chocolatey bites)

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a large bowl, beat the room-temperature butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes with a mixer).
  3. Beat in the egg, egg yolk, and vanilla extract until fully combined.
  4. In a separate medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Add the dry ingredients to the wet ingredients and mix on low speed or fold with a spatula until just combined. Do not overmix.
  6. Portion the dough into 1.5-tablespoon balls. Place them on a baking sheet and refrigerate for at least 15 minutes.
  7. Take a chilled dough ball, flatten it slightly, and place a teaspoon of Nutella in the center. Fold the dough over the Nutella to seal it completely and roll back into a ball.
  8. Place the stuffed dough balls on the prepared baking sheets.
  9. Bake for 9-11 minutes, until edges are set but centers are still soft.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chilling the dough is crucial to prevent spreading and help the cookies hold their shape around the Nutella center. Do not overbake; the centers will continue to cook on the hot baking sheet. For best results, serve warm. Dough balls can be frozen raw and baked from frozen, adding 1-2 minutes to baking time.
