Description
A one-pan skillet recipe for tender, beer-braised bratwurst served with deeply caramelized onions. This easy weeknight meal delivers authentic German festival flavors without the hassle of grilling.

- 6–8 bratwurst links (about 1.5 lbs / 680g)
- 3 large yellow onions, sliced thinly (about 900g)
- 1 bottle or can lager or pilsner beer (12 oz / 355ml)
- 2 tablespoons unsalted butter (30g)
- 3 cloves garlic, minced
- 1 teaspoon caraway seeds
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme (or 1 sprig fresh)
- Salt and black pepper to taste
- 1 tablespoon oil (optional, for searing lean sausages)
- 1 cup sauerkraut, drained (optional)
Instructions
- Slice the onions thinly lengthwise. Slice bratwurst links in half diagonally or leave whole.
- Heat a large cast-iron skillet or Dutch oven over medium-high heat. Sear bratwurst for 2-3 minutes per side until browned. Remove to a plate, leaving about 1 tablespoon of rendered fat in the pan.
- Reduce heat to medium. Add butter to the pan. Add onions and stir to coat in fat and butter. Cook for 10 minutes, stirring occasionally, until soft and translucent.
- Reduce heat to medium-low. Continue cooking onions for 15-20 minutes, stirring every few minutes, until deep amber and jammy. Add a splash of water if sticking occurs.
- Add minced garlic, caraway seeds, thyme, and Dijon mustard. Stir for 1 minute until fragrant.
- Pour in the beer, scraping up browned bits from the bottom. Simmer for 2-3 minutes to reduce slightly.
- Return bratwurst to the pan, nestling them into the onions. Spoon sauce over sausages. Cover and simmer on low-medium heat for 5-7 minutes.
- Remove lid. If liquid is too thin, simmer uncovered for 1 minute to thicken. Taste and adjust salt and pepper.
- Serve immediately with toasted buns or alongside sides like potato salad or roasted potatoes.
Notes
Do not rush the caramelization of the onions; low and slow is key. Reserve the rendered fat from the sausages for flavor. Use a lid to steam the sausages through without drying them out. If serving in buns, toast them to prevent sogginess. Taste before adding extra salt as bratwurst and beer can be salty.
