  • ¾ cup granulated sugar

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper and lightly spray with cooking spray.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth with no chunks.
  3. Add the granulated sugar, vegetable oil, egg, and vanilla extract to the bananas. Whisk vigorously until the mixture is glossy and well-combined.
  4. Add the flour, baking soda, and salt to the wet ingredients. Gently fold in with a wooden spoon or silicone spatula just until no streaks of flour remain. Do not overmix.
  5. Fold in ¾ cup of the chocolate chips, reserving the remaining ¼ cup for the top.
  6. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the reserved chocolate chips evenly over the batter.
  7. Bake for 55-60 minutes. If the top browns too quickly after 30 minutes, tent loosely with aluminum foil. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the bread cool in the pan for 10 minutes, then lift it out using the parchment overhang and place on a cooling rack to cool completely before slicing.

Notes

Use bananas that are black and wrinkled for the best flavor. Do not overmix the batter to ensure a tender crumb. Store in an airtight container at room temperature for 3-4 days or freeze for up to 3 months.
