One-Pan Honey Garlic Salmon with Roasted Asparagus

Description

An easy, impressive weeknight dinner that cooks in a single pan. This honey garlic salmon features a sticky, caramelized glaze and is paired with roasted asparagus for a healthy, restaurant-quality meal ready in just 20 minutes.


Ingredients

  • 1.5 to 2 pounds salmon fillets
  • 1 bunch asparagus (about 1 pound)
  • 2 tablespoons avocado oil or olive oil
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 45 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon red pepper flakes
  • 2 stalks green onions, sliced
  • 1 tablespoon toasted sesame seeds
  • Salt and black pepper to taste

Instructions

  1. Prep ingredients: Snap off woody ends of asparagus, mince garlic, grate ginger, and whisk together honey, soy sauce, rice vinegar, red pepper flakes, and half the sesame seeds in a small bowl.
  2. Heat a large skillet over medium-high heat and add avocado oil. Pat salmon fillets dry with paper towels and season with salt and pepper.
  3. Place salmon fillets skin-side down in the skillet. Sear for 3-4 minutes without moving until the color changes halfway up the sides.
  4. Flip the salmon. Arrange asparagus spears around the salmon in the skillet.
  5. Reduce heat to medium-low. Pour the honey-garlic glaze over the salmon and asparagus. Baste the salmon with the sauce.
  6. Cook for another 2-3 minutes until the sauce thickens and the salmon flakes easily with a fork but remains moist inside.
  7. Remove from heat. Sprinkle with remaining sesame seeds and sliced green onions.
  8. Serve immediately.

Notes

Pat the fish dry before searing to ensure a good crust. Reduce heat when adding the glaze to prevent the honey from burning. Salmon continues to cook after removal from heat, so take it off when just barely opaque in the center. Do not freeze this dish as the texture of the salmon and asparagus will suffer.
