Ingredients

  • 1 cup fresh raspberries (about 125g)
  • 3 tablespoons fresh lime juice (from 2 medium limes)
  • 2 cups sparkling water (480ml), plain or lightly flavored with no added sugar
  • 12 tablespoons simple syrup (homemade or store-bought)
  • Ice cubes
  • 46 fresh mint leaves (optional)
  • Lime slices and extra raspberries for garnish

Instructions

  1. Rinse the raspberries and set a few aside for garnish. Juice your limes until you have about 3 tablespoons. Prepare simple syrup if needed by dissolving equal parts sugar and water over low heat and cooling it down.
  2. In a large glass or pitcher, gently muddle the raspberries with 1 tablespoon of simple syrup to release juice without pulverizing.
  3. Add the fresh lime juice and remaining simple syrup (start with 1 tablespoon and adjust to taste). Stir to combine.
  4. Fill the glass or pitcher with ice cubes, then slowly pour in the sparkling water. Stir gently to keep the bubbles alive.
  5. Garnish with fresh mint leaves, lime slices, and a few whole raspberries. Serve immediately.

Notes

Do not over-muddle raspberries to avoid bitterness and cloudiness. Use fresh lime juice for best flavor. Adjust sweetness gradually. Chill sparkling water before use. Freeze raspberries to use as ice cubes to keep the drink cold without diluting it.
