- 1.5 lbs ground beef (80/20 fat ratio)
- 1 medium white onion (finely diced)
- 1 tablespoon chili powder (blend with cumin and garlic)
- 1 teaspoon ground cumin
- 3 cloves garlic (minced)
- 1/4 cup beef broth
- 1 teaspoon kosher salt (plus more to taste)
- Black pepper (to taste)
- 1 cup full-fat sour cream
- 2 tablespoons mayonnaise
- 1/2 cup fresh cilantro (packed, leaves and stems chopped)
- 2 tablespoons fresh lime juice
- 1 lime (zested)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt (for crema)
- 24 small corn tortillas (100% masa harina)
- 2 medium radishes (thinly sliced)
- 2 ripe avocados (sliced)
- Lime wedges (for serving)
- Cilantro leaves (for garnish)
Instructions
- In a blender, combine sour cream, mayonnaise, chopped cilantro, lime juice, lime zest, garlic powder, and salt. Blend until smooth. Refrigerate until ready to serve.
- Dice the white onion. Slice radishes thinly and avocados just before serving. Squeeze limes and set wedges aside.
- Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon until browned and crumbled.
- Add half of the diced onion, minced garlic, chili powder, cumin, salt, and pepper to the meat. Stir frequently until onions soften.
- Pour in beef broth and simmer for 2-3 minutes until liquid evaporates. Taste and adjust seasoning. Remove from heat.
- Heat a dry skillet over medium heat. Warm tortillas for 30-60 seconds per side until puffed and soft. Stack and cover with a towel to keep warm.
- To assemble, place two warm tortillas on a plate. Top with meat mixture, raw diced onion, radishes, and avocado.
- Drizzle generously with cilantro lime crema, squeeze lime wedge over top, and garnish with cilantro leaves. Serve immediately.
Notes
Use two tortillas per taco for structural integrity. The crema can be made up to 3 days in advance. Ensure you use full-fat sour cream for the best texture. Warm tortillas properly to keep them soft and pliable.
