Description
These festive and manageable cheesecake bars capture the essence of Rosh Hashanah with a creamy honey-infused filling, a tart pomegranate glaze, and ruby-red seeds. They are easier to make than traditional cheesecakes, travel well, and offer symbolic sweetness for the new year.
Ingredients
- 1 ½ cups (150g) graham cracker crumbs
- ½ cup (115g) unsalted butter, melted
- 3 tablespoons (40g) granulated sugar
- ¼ teaspoon salt
- 24 oz (680g) full-fat cream cheese, room temperature
- 1 cup (200g) granulated sugar
- ½ cup (120ml) heavy cream
- ¼ cup (80ml) mild honey (e.g., orange blossom)
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- ½ cup (120ml) 100% pure pomegranate juice
- 2 tablespoons agave nectar or honey
- 1 teaspoon arrowroot starch or cornstarch
- ½ cup (80g) fresh pomegranate seeds
- Edible gold dust (optional)
Instructions
- Preheat oven to 325°F (160°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the long sides, and grease lightly.
- In a medium bowl, mix graham cracker crumbs, melted butter, 3 tablespoons sugar, and salt until it resembles wet sand. Press firmly and evenly into the bottom of the prepared pan. Set aside.
- In a large bowl, beat the room-temperature cream cheese on medium speed until completely smooth. Scrape down the sides and bottom of the bowl.
- Add 1 cup sugar and honey to the cream cheese. Beat on low speed until combined and sugar is mostly dissolved. Scrape the bowl again.
- Add eggs one at a time, beating on low speed just until incorporated. Do not overmix. Add heavy cream, vanilla extract, and lemon juice. Mix gently until the batter is thick, glossy, and smooth.
- Pour the batter over the crust and smooth the top. Bake for 45-50 minutes. The edges should be set and slightly puffed, but the center should have a slight jiggle.
- Remove from oven and let cool on a wire rack for at least 1 hour. The center will sink slightly as it cools.
- While bars cool, make the glaze: In a small saucepan, whisk pomegranate juice, agave nectar, and arrowroot starch. Heat over medium heat, stirring constantly, until thickened and glossy (3-4 minutes).
- Once bars are completely cool, pour the glaze over the top and spread evenly. Sprinkle with fresh pomegranate seeds and optional gold dust.
- Cover and refrigerate for at least 4 hours, preferably overnight, to set.
- Lift bars out using parchment overhang. Use a sharp knife to cut into squares, wiping the knife between cuts. Serve chilled.
Notes
Ensure cream cheese and eggs are at room temperature to avoid lumps. Do not overmix the batter after adding eggs to prevent cracking. The bars must chill for at least 4 hours to set properly and slice cleanly. They taste better the next day. Do not freeze, as the texture may become grainy.
