  • 1/2 cup honey
  • 1/4 cup soy sauce (low-sodium recommended)
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch (for sauce)
  • 1/4 cup water (for sauce)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon sesame oil
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon toasted sesame seeds (for garnish)
  • Steamed jasmine rice or noodles (for serving)

Instructions

  1. Wash and halve the baby potatoes. Pat chicken thighs dry with paper towels.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, grated ginger, 1 tablespoon cornstarch, 1/4 cup water, and red pepper flakes until smooth. Stir in sesame oil.
  3. Place halved potatoes in the bottom of a 6-quart slow cooker. Arrange chicken thighs on top of the potatoes.
  4. Pour the honey garlic sauce evenly over the chicken and potatoes, ensuring sauce gets under the chicken.
  5. Cover and cook on low for 4-6 hours (or high for 3-4 hours) until chicken is tender and potatoes are fork-tender.
  6. Once cooked, turn slow cooker to high. Mix 1 tablespoon cornstarch with 1 tablespoon cold water to create a slurry.
  7. Stir the slurry into the slow cooker. Cover and cook on high for 15-20 minutes until the sauce thickens and becomes glossy.
  8. Transfer chicken and potatoes to a serving platter. Spoon extra sauce over the top.
  9. Garnish with sliced green onions and toasted sesame seeds. Serve immediately over steamed jasmine rice.

Notes

Chicken breasts can be used but may dry out; reduce cooking time to 3-4 hours on high. Potatoes should be halved uniformly to ensure even cooking. The sauce will be thin initially but thickens with the cornstarch slurry at the end. Do not freeze this recipe as potatoes become mushy upon thawing. Store leftovers in the refrigerator for up to 4 days.
