Instructions
- Prep ingredients: Slice the sausage, dice the onion, and shred the cheeses. Have the cream and sour cream ready.
- Brown the sausage: Heat a 10-inch cast-iron skillet over medium-high heat. Add the sliced sausage and cook for 3-4 minutes until browned and crispy. Drain excess fat if necessary, but leave some for flavor.
- Sauté aromatics: Add the diced onion to the skillet with the sausage. Cook for 2-3 minutes until softened. Add garlic powder and cumin, stirring for 30 seconds until fragrant.
- Build the sauce: Reduce heat to medium-low. Pour in heavy cream, sour cream, Rotel tomatoes (with juices), and green chiles. Stir to combine and simmer for 3-4 minutes until hot and bubbly.
- Add cheese: Remove the skillet from heat. Stir in the softened cream cheese until melted. Gradually add the shredded cheddar and pepper jack cheese, stirring constantly until smooth and thickened.
