Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a small bowl, mix ½ cup granulated sugar and 1 ½ teaspoons cinnamon for the swirl; set aside.
  3. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until pale and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, fully incorporating each before adding the next, then stir in vanilla extract.
  5. In another bowl, whisk together flour, baking powder, salt, and 2 teaspoons cinnamon.
  6. Gently fold dry ingredients into wet batter with a rubber spatula until no flour streaks remain; do not overmix.
  7. Pour half the batter into the prepared pan and spread evenly. Sprinkle half of the cinnamon sugar mixture over the batter.
  8. Spread the remaining batter on top, then sprinkle the rest of the cinnamon sugar mixture.
  9. Use a butter knife or skewer to swirl the cinnamon sugar into the batter with figure-eight or circular motions.
  10. Bake for 25-30 minutes until edges are golden and a toothpick inserted near the center comes out with a few moist crumbs.
  11. Cool completely on a wire rack before lifting out using parchment paper overhang. Slice into 16 squares and serve.
