Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or grease lightly.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar (if using) until evenly distributed.
  3. Add the cold, cubed butter to the dry ingredients. Use a fork, pastry cutter, or fingers to cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized chunks of butter remaining.
  4. Make a well in the center and pour in the buttermilk. Gently stir with a spoon or spatula until the dough just comes together. Do not overmix; the dough should look shaggy and sticky.
