  • 34 cloves garlic, minced
  • 3/4 cup (180ml) heavy cream
  • 2 tablespoons chives, chopped (optional)
  • 1/2 teaspoon garlic powder (optional)
  • Everything bagel seasoning (optional, for topping)

Instructions

  1. Preheat oven to 425°F (220°C). Cube the butter and freeze for 10 minutes to ensure it stays cold.
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt until combined.
  3. Add the cold, cubed butter to the flour mixture. Use a pastry cutter, fork, or fingers to cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  4. Stir in the minced garlic and grated cheese into the flour-butter mixture.
  5. Pour in the heavy cream and mix gently with a wooden spoon or spatula until the dough just comes together. It should look shaggy and uneven; do not overmix.
  6. Turn the dough out onto a lightly floured surface and pat it into a circle about 1-inch thick.
  7. Cut the dough into 6-8 biscuits using a sharp knife or round cutter. Press straight down without twisting to allow the biscuits to rise.
  8. Place the biscuits close together on a baking sheet lined with parchment paper for soft sides.
  9. Brush the tops of the biscuits with a little extra heavy cream.
  10. Bake for 12-15 minutes, or until golden brown on top and cooked through.
  11. Let cool for 5 minutes on the pan before serving warm.

Notes

Keep all ingredients cold for flaky layers. Do not overmix the dough to avoid tough biscuits. Use freshly grated sharp cheddar as pre-shredded cheese contains anti-caking agents that prevent proper melting. If using self-rising flour, skip the baking powder and reduce salt by half.
