Description
A vibrant, tart, and refreshing alcohol-free summer drink made with a homemade hibiscus syrup, fresh lime juice, and sparkling water. It is easy to prepare, budget-friendly, and perfect for parties.

- 1 cup (30g) dried hibiscus flowers
- 4 cups (1 liter) water
- 1/2 cup (100g) granulated sugar
- 3 large limes (juiced)
- 1 teaspoon vanilla extract
- 1 cup (150g) fresh berries (strawberries, raspberries, or blackberries)
- 4–6 cups (1–1.5 liters) sparkling water
- Lime wedges (for garnish)
- Ice (lots of it)
Instructions
- In a medium saucepan, combine dried hibiscus flowers, water, and sugar. Bring to a boil over medium-high heat.
- Reduce heat to low and simmer for 10 minutes until the water turns a deep red.
- Remove from heat and let steep for another 10 minutes to intensify flavor.
- Strain the mixture through a fine-mesh sieve into a bowl, pressing on the flowers to extract all liquid. Discard flowers. You should have about 2 cups of concentrate.
- While the syrup is still warm, stir in fresh lime juice and vanilla extract. Taste and adjust sweetness or tartness if needed.
- Let the concentrate cool to room temperature, then refrigerate for at least 2 hours or overnight.
- To serve, fill glasses with ice, pour in about 1/2 cup of hibiscus concentrate, and top with sparkling water. Stir gently.
- Garnish with fresh berries and a lime wedge. Serve immediately.
Notes
Use cold sparkling water to prevent the drink from going flat. The hibiscus concentrate can be made up to 2 weeks in advance and stored in the fridge. Do not freeze the mixed drink as it will lose its fizz. For a spicy variation, add a slice of jalapeño while steeping.
