  • 1 1/2 cups (250g) white chocolate chunks, chopped
  • 1/2 cup rainbow sprinkles (mix of jimmies and nonpareils)
  • Flaky sea salt, optional for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light, fluffy, and pale in color (about 3 minutes).
  3. Add the eggs, extra egg yolk, and vanilla extract. Beat on medium speed until fully combined and smooth. Scrape down the sides of the bowl.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or folding by hand until just combined. Do not overmix.
  6. Gently fold in the chopped white chocolate chunks and rainbow sprinkles until evenly distributed.
  7. Scoop dough into 2-tablespoon balls and place on prepared baking sheets, spacing them 2 inches apart. For thicker cookies, chill dough for at least 30 minutes.
  8. Bake for 10-12 minutes, or until edges are lightly golden and centers are still soft. Do not overbake.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Sprinkle with flaky sea salt if desired.

Notes
