Instructions

  1. Brown the butter in a large saucepan over medium heat, stirring constantly until it smells like toasted nuts and turns golden brown. Remove from heat and pour into a heat-proof bowl to cool until just warm.
  2. In a large bowl, whisk the cooled brown butter, 1 cup granulated sugar, and vanilla extract vigorously for about a minute until the mixture is slightly lighter in color.
  3. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes (ideally 1-2 hours) to chill.
