  • 2 medium ripe avocados (about 1 cup / 240g pulp)
  • 6 ounces (170g) dark chocolate (70% cocoa or higher), chopped
  • 23 tablespoons full-fat canned coconut milk
  • 1 teaspoon vanilla extract
  • 12 tablespoons maple syrup (optional, to taste)
  • Pinch of sea salt
  • 2 tablespoons cacao nibs (for garnish)

Instructions

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Discard skins and scrape away any brown spots or stringy bits to ensure smoothness.
  2. Chop the dark chocolate into small pieces. Melt gently using a double boiler or microwave in 30-second intervals, stirring until smooth. Let cool slightly so it is warm, not hot.
  3. Add the avocado flesh, melted chocolate, coconut milk, vanilla extract, maple syrup (if using), and salt to a food processor or high-speed blender.
  4. Pulse to break up ingredients, then blend on high for 1-2 minutes, stopping to scrape down sides, until the mixture is completely smooth and glossy.
  5. Taste the mixture and adjust sweetness or salt if needed.
  6. Spoon the mousse into serving ramekins or glasses. Cover and refrigerate for at least 30 minutes, or ideally 1-2 hours, to firm up.
  7. Just before serving, sprinkle with cacao nibs and optional fresh berries or mint leaves. Serve chilled.

Notes

Ensure avocados are perfectly ripe but not mushy for the best texture. Do not use hot chocolate when blending, as it can cook the avocado and make it grainy. The mousse tastes better after chilling overnight as flavors meld. Store in an airtight container in the fridge for up to 4 days.
