Ingredients

  • 6 bone-in, skin-on chicken thighs (about 2 pounds / 900g)
  • 4 cloves fresh garlic, minced (about 2 teaspoons)
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 3 tablespoons extra virgin olive oil (45 ml)
  • 2 tablespoons lemon juice (30 ml)
  • 1 teaspoon coarse sea salt
  • ½ teaspoon freshly ground black pepper
  • Optional: ½ teaspoon garlic powder
  • Optional: pinch of red pepper flakes for heat

Instructions

  1. Pat the chicken thighs dry with paper towels to help the skin crisp up.
  2. In a large bowl, combine olive oil, minced garlic, chopped rosemary, thyme, lemon juice, sea salt, black pepper, and garlic powder if using.
  3. Toss the chicken thighs in the herb mixture until fully coated. Let marinate for 5 minutes at room temperature while preheating the oven.
  4. Preheat the oven to 425°F (220°C). Line a baking sheet with foil or parchment paper.
  5. Arrange the chicken thighs skin-side up on the baking sheet, making sure they are not touching.
  6. Roast the chicken for 35-40 minutes. Halfway through (around 20 minutes), use tongs to briefly turn the chicken over, then flip back to skin-side up to help render fat and crisp the skin.
  7. The chicken is done when the skin is golden brown and crispy and the internal temperature reaches 165°F (74°C).
  8. Remove from oven and let rest for 5 minutes to lock in juices.
  9. Serve with your favorite Whole30 sides such as roasted vegetables or a simple salad.

Notes

Pat chicken dry for crispy skin. Use bone-in, skin-on thighs for juiciness and flavor. Do not overcrowd the pan. Turn chicken halfway through roasting for even crispiness. Let rest before serving. Leftovers reheat well in a skillet with a splash of water to keep moist. Avoid freezing to preserve skin texture.
