Description
A rich, indulgent baked noodle kugel that is crispy on the edges and custardy in the middle, featuring golden raisins and cinnamon for a festive post-fasting meal.
Ingredients
Scale
- 12 ounces wide egg noodles
- 4 tablespoons unsalted butter (divided)
- 1 cup golden raisins
- 1/2 cup white sugar (divided)
- 2 teaspoons ground cinnamon (divided)
- 4 large eggs
- 1 cup full-fat sour cream
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 1 cup shredded cheese (mix of sharp cheddar and mozzarella)
- Optional: 1/2 cup chopped toasted pecans or walnuts
Instructions
- Soak golden raisins in boiling water for 10 minutes, then drain well and pat dry with paper towels.
- Bring a large pot of salted water to a boil. Cook egg noodles until al dente (8-10 minutes). Drain, rinse with cold water, and toss with 1 tablespoon melted butter to prevent sticking.
- In a large mixing bowl, whisk together eggs, sour cream, milk, vanilla extract, and 1/2 cup sugar until smooth and pale yellow.
- Add the cooked noodles, drained raisins, and shredded cheese to the custard mixture. Fold gently until evenly distributed.
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Pour the noodle mixture into the prepared dish and spread evenly.
- Mix remaining sugar and cinnamon for the topping. Sprinkle evenly over the kugel.
- Bake for 45-50 minutes until the top is golden brown and the center is set.
- Let rest for at least 15 minutes before slicing and serving.
Notes
Soaking the raisins is crucial to prevent them from being dry or bitter. Ensure noodles are cooked al dente as they will continue cooking in the oven. Let the kugel rest for 15-20 minutes after baking to allow the custard to set properly for clean slicing.
