A no-bake, make-ahead dessert featuring layers of Oreos, vanilla wafers, and spiced pumpkin whipped cream. This easy fall treat captures cozy autumn flavors without heating up the kitchen.

- 2 packages (14.3 oz each) Original Oreos
- 1 package (14.7 oz) Vanilla Wafers
- 3 cups (720ml) Heavy Whipping Cream
- 8 oz (225g) Full-Fat Cream Cheese, softened
- 15 oz (425g) can 100% Pure Pumpkin Puree
- 1 cup (120g) Powdered Sugar
- 2 tablespoons Pumpkin Pie Spice
- 1 tablespoon Cinnamon
- 1 teaspoon Vanilla Extract
Instructions
- Chill a large mixing bowl and beaters in the freezer for 15 minutes.
- Let cream cheese soften at room temperature for 10-15 minutes.
- Pour cold heavy cream into the chilled bowl and beat on medium-high speed until soft peaks form (2-3 minutes).
- Add softened cream cheese, powdered sugar, pumpkin puree, pumpkin pie spice, cinnamon, and vanilla extract.
- Beat on medium-high speed until stiff peaks form and the mixture is smooth.
- Break cookies in half if necessary and create a single even layer of Oreos and vanilla wafers in the bottom of a 9×13 inch dish.
- Spread half of the pumpkin whipped cream over the cookie layer.
- Add a second layer of cookies on top of the cream.
- Spread the remaining whipped cream over the top layer of cookies.
- Cover tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight, until cookies are soft.
- Slice with a sharp knife dipped in hot water for clean cuts.
Notes
Ensure all equipment is cold for best whipping results. Do not use Double Stuf Oreos or gluten-free Oreos as they may affect texture. Use 100% pure pumpkin puree, not pie filling. The cake improves in flavor if made a day ahead.
