Description

A no-bake, gluten-free berry trifle featuring layers of fresh strawberries, raspberries, and blueberries folded into a tangy, whipped cream cheese mixture. This elegant dessert is perfect for summer gatherings and requires minimal effort.


Ingredients

  • 2 cups (480ml) heavy whipping cream, cold
  • 8 oz (225g) cream cheese, softened (full-fat block)
  • ½ cup (60g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pound (450g) strawberries, sliced and chopped
  • 1 pint (225g) raspberries
  • 1 pint (225g) blueberries
  • Fresh mint leaves for garnish (optional)
  • Extra whole berries for garnish (optional)

Instructions

  1. Wash and dry strawberries, raspberries, and blueberries. Hull and slice half the strawberries thinly; chop the other half into small pieces. Leave raspberries and blueberries whole.
  2. In a large, chilled bowl, beat the softened cream cheese, powdered sugar, and vanilla extract on medium-high speed until smooth (about 1 minute).
  3. Add the cold heavy whipping cream and beat on high speed until stiff peaks form (2-3 minutes). Do not overbeat.
  4. Gently fold the chopped strawberries and half of the blueberries into the cream mixture using a rubber spatula.
  5. Assemble the trifle: Start with a layer of cream mixture in the bottom of a 6-quart glass trifle bowl. Add a layer of sliced strawberries and whole raspberries. Add another layer of cream, then a layer of blueberries. Repeat layers, finishing with cream on top.
  6. Garnish with whole strawberries, blueberries, and fresh mint leaves.
  7. Cover with plastic wrap and refrigerate for at least 30 minutes (or up to 24 hours) to allow flavors to meld and layers to set before serving.

Notes

Ensure all tools and cream are very cold for best whipping results. If using frozen berries, thaw completely and drain excess liquid to prevent sogginess. This dessert is best made ahead and stored in the refrigerator for up to 3 days. Do not freeze as the cream will separate.
