  • 1 cup (170g) sugar-free dark chocolate chips (at least 70% cocoa)
  • 1 tablespoon (15ml) coconut oil
  • Pinch of sea salt
  • 1/2 cup (125g) natural creamy peanut butter
  • 23 tablespoons (25-35g) powdered sugar-free sweetener (erythritol or monk fruit)
  • 12 teaspoons heavy cream or coconut cream
  • 1/2 teaspoon pure vanilla extract
  • Optional: Flaky sea salt or crushed peanuts for topping

Instructions

  1. Place foil candy cups into a mini muffin tin. If not using foil cups, lightly grease the tin with coconut oil spray.
  2. Melt dark chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring well between each, until smooth. Stir in the pinch of sea salt.
  3. Add about 1 teaspoon of chocolate to the bottom of each foil cup, spreading it up the sides to create a thin shell.
  4. Freeze the muffin tin for 5 minutes to set the chocolate shells.
  5. While shells are setting, whisk natural peanut butter, powdered sweetener, vanilla extract, and heavy cream (or coconut cream) in a small bowl until smooth and creamy.
  6. Remove muffin tin from freezer. Spoon about 1 teaspoon of peanut butter filling into each chocolate shell, smoothing the top.
  7. Melt remaining chocolate if needed. Spoon or pipe another teaspoon of chocolate over the filling to seal it completely.
  8. Freeze for at least 15-20 minutes, or until the chocolate is completely hard.
  9. Store in an airtight container in the refrigerator or freezer.

Notes

Use powdered sweetener to avoid grittiness. Ensure chocolate shells are fully set before adding filling to prevent sinking. Store in the fridge for up to two weeks or freezer for up to three months.
